Easy Packet Potatoes

We served these with Turkey Meatloaf.  These are sometimes called Hobo potatoes, you can also cook these on the grill or campfire.  Just keep out of direct line of fire.  We prepared them before the meatloaf and threw them in the oven and cooked about an hour, so these paired up perfectly with the meatloaf, cooked in the same oven and were done at the same time. 

Ingredients:

  • Russet or Red Potatoes - 1 per person
  • Onion (sliced thin)
  • 1/2-1 TBS Olive Oil - approximately per potato
  • Salt and Pepper
  • Foil
Clean and dry potatoes well, cut in slices, about 6 mm thick, add onion slices, olive oil, salt and pepper, mix until potatoes and onions are well coated with oil, fold into a piece of foil.  Put on a cookie sheet and bake 350 degrees for 1 hour.  Or put on the grill for approximately 1 hour on medium heat. 

Here's what you need:

Cut the potatoes into 5-6 mm slices
Add onion (if desired)
Olive oil, salt and pepper
Make sure the potato and onion is well coated in oil
Fold into the foil, nice and securely
Bake at 350 degrees for about an hour
